Are there any books about Thomas Culpeper? and also any known portraits?
Apart from wanting to seduce Queen Catherine as he could have any woman he wanted, I struggle to find a motive for his actions, especially since he would have seen the downfall of Anne Boleyn first hand, so would have known exactly what Henry was capable of.

I don't believe there are any portraits of Culpeper. None that I could find, anyway.
I could not find any books dealing exclusively with Culpeper, but he is mentioned in most books dealing with Katherine Howard. Joanna Denny's bio on KH (not very good), but she does discuss TC. I have yet to read (I am awaiting it's arrival), but Lacey Baldwin-Smith's book A Tudor Tragedy would discuss TC.
